One fun variation is too pick two different Capital Countries and try to capture your opponets capital. If you do you win, but you can only start with 20 armies and each turn you can only attack one country per turn.

Another fun variation is freeze up Risk. Every time you capture a continent your opponent(s) can never attack that continent again. most time you will end in a draw but whoever has the higher scoring countries wins.

for capital risk, i like it better when you can attack more countries per turn. It forces you to play defense, or you can get swept in one turn (more strategy!).

freeze up Risk seems like it doesn't take much skill, but i tried it and it was quite fun anyway!

Once I played Capital Risk like Capture the Flag. You play Capital Risk as usual, but now the capital has a flag on it (use whatever token you like). Capture the Flag and bring it back to your home base for the victory. The flag moves like an army, but does not attack or defend. You can fortify the flag at the end of your turn, but only one territory per turn! Plus, you must hold your own capital to win and also control your own Flag. Makes for a fun game for a different challenge!
